Shrimp with Beer / Camaroes com Cerveja

 Ingredientes:

1 Kg de Camarão
8 colheres de sopa Azeite
6 alhos esmagados
4 ou 5 folhas de Louro
2 malaguetas pequeninas
 cerveja
Salsa

Modo de preparação:
Tempera-se os camarões com sal grosso e reserva-se.
Num tacho largo vamos colocar azeite, os alhos, as folhas de louro e as malaguetas. Deixe aquecer tudo muito bem.
Quando estiver bem quente vamos juntar os camarões, e deixá-los fritar em lume alto até ficarem "meio-fritos".
Quando os camarões começarem a ganhar cor vamos juntar a cerveja e deixar o lume no máximo, até aos camarões estarem fritos.
Após estarem fritos vamos retirá-los com uma escumadeira, e colocar num prato.
Vamos deixar o molho a apurar no lume durante 5 minutos.
De seguida rega-se os camarões com o molho, e está pronto a servir!

ingredients:

Preparation:

Biscoitos / Cookies




     250g butter, melted
     250g Sugar
     600g plain flour without yeast
     3 eggs
     Flour for dusting

preparation:

  In a bowl, combine sugar and melted butter.
Knead well until it becomes a creamy white.
Gradually and alternately add the flour and eggs.
Knead everything well.

  Sprinkle the countertop with flour.
Place the dough on the counter and sprinkle with a little flour.
With a rolling pin, stretch the dough.
With a pastry cutter or a glass, cut the dough.
Carefully place the cookies on a baking tray, previously greased with butter and sprinkled with flour.

Take the cookies in the oven preheated to 200 degrees and bake 10 to 12 minutes.
When the cookies are baked and blonde, remove them.
Allow to cool.

  Polvilhe uma bancada com farinha.
Coloque uma massa nd bancada e polvilhe com hum pouco de farinha.
Com o rolo da massa, estenda uma massa.
Com hum Cortador de massa OU UM copo, corte uma massa.
Com Cuidado, coloque OS Biscoitos Num tabuleiro de ir AO forno, untado com manteiga Previamente e polvilhado com farinha.

Leve OS Biscoitos AO forno pré-aquecido 200 º n º s e deixe Cozer Entre 10 a 12 Minutos.
Quando estiverem cozidos OS Biscoitos e loirinhos, retire-os.
Deixe arrefecer.


Frang o com laranja / Orange Chicken



Ingredientes
1 frango
suco de duas laranjas  grandes
2 colheres (sopa) de mostarda (usei da dijon, com grãos de mostarda)
sal, pimenta do reino e outros temperos (a gosto)

Em um saco plástico, misture o suco de laranja, a mostarda e os outros temperos. Lambuze o frango nessa mistura e deixe-o marinando (apenas para constar, não recomendo furar a carne porque isso faz com que ela perca umidade natural).

Também é possível deixar o frango marinando em uma vasilha ou na própria forma em que ele será assado (mas isso, dependendo do tamanho da sua geladeira, implica em mais vasilhas para lavar depois).

Depois de marinado (no meu caso, o frango ficou da noite para o dia marinando), arranje o frango em uma forma (com a pele virada para cima para que o frango fique mais macio e úmido) e cubra a forma com papel alumínio.

Leve para assar, em forno pré-aquecido e mantenha o papel alumínio até o frango estar bem cozido. Em seguida, retire o papel alumínio (e mantenha o frango no forno) para que a pele fique dourada e crocante. Os tempos para assar o frango variam segundo o forno.

two large orange juice

2 spoons (soup) of mustard (I used the dijon, grain mustard)

salt, pepper and other seasonings (to taste)

In a plastic bag, combine orange juice, mustard and other seasonings. Smear the chicken in this mixture and let it marinate (for the record, do not recommend piercing the meat because it makes it to lose natural moisture).

You can also let the chicken marinate in a bowl or in the form in which it is cooked (but that, depending on the size of your refrigerator, implies more bowls for washing later).

After marinating (in my case, the chicken was marinated overnight), arrange the chicken in a form (with the skin side up so that the chicken is more tender and moist) and cover with foil shape.

Bake in preheated oven and keep the foil until the chicken is cooked through. Then remove the foil (and keep the chicken in the oven) so that the skin is golden brown and crispy. The time to bake the chicken vary depending on the oven.

 To complete this dish with white rice and cowlaw.





Creme de Abobora / Cream of Pumpkin


Creme de Abobora

Ingredientes:
1 kg de abóbora
3 dentes de alho
2 cebolas
1 raminho de tomilho
4 colheres de sopa de azeite
1,2 L de água
500 g grão de bico cozido
sal q.b.
300 g. de coracao cortado e cozido
2 CeNouras cozidas partida rodelas

1. Retirar a casca à abóbora. Cortar a abóbora em pedaços.

2. Num pirex colocar a abóbora, os dentes de alho e a cebola cortada em meias luas. Juntar o ramo de tomilho. Regar com o azeite e levar ao forno a assar. Mexer de vez em quando. Retirar quando a abóbora estiver assada.

3. Colocar o assado numa panela, retirando as hastes do tomilho. Adicionar água e sal a gosto. Deixar ferver aproximadamente 5 a 7 minutos.

4. Triturar os legumes e adicionar o grão cozido, coracao e cenoura as rodelas. Deixar ferver uns minutos.

5. Servir a sopa com um fio de azeite

Cream of Pumpkin

ingredients:
1 kg of gourd
3 cloves of garlic
2 onions
1 sprig of thyme
4 tablespoons olive oil
1.2 L of water
500 g cooked chickpeas
salt q.b.
300 g. the heart cut and sewn
2 slices cooked carrots starting

1. Remove the peel the pumpkin. Cut the pumpkin into pieces.

2. In a baking dish place the pumpkin, garlic cloves and onion cut into half moons. Add the sprig of thyme. Drizzle with olive oil and bake baking. Stir from time to time. Remove when the pumpkin is cooked.

3. Place the roast in a pan, removing the stems of thyme. Add water and salt to taste. Boil about 5-7 minutes.

4. Mash the vegetables and add the cooked grain, heart and carrot slices. Boil a few minutes.

5. Serve the soup with a drizzle of olive oil

Jamie Oliver was brought up in Clavering, Essex, England. His parents ran a pub, "The Cricketers", where he used to practise in the kitchen.[1] He was educated at Newport Free Grammar School. He left school at age sixteen without qualifications and went on to attend Westminster Kingsway College, formerly Westminster College.[1][2] He then earned a City & Guilds NVQ in home economics.

His first job was as a pastry chef at Antonio Carluccio's Neal's Yard restaurant, where he first gained experience with preparing Italian cuisine, and developed a relationship with his "mentor" Gennaro Contaldo.[2] Oliver then moved to The River Café, Fulham, as a sous chef.

It was there where he was noticed by the BBC in 1997 after making an unscripted appearance in a documentary about the restaurant, "Christmas at the River Cafe".[3] That year, his show The Naked Chef debuted and his cookbook became a number one best-seller in the UK.[4] That same year, Oliver was invited to prepare lunch for then Prime Minister Tony Blair at No. 10 Downing Street.[4]

In July 2000, Oliver married former model Juliette Norton.[5] The couple met in 1993 and have four children: Poppy Honey Rosie Oliver (born 18 March 2002), Daisy Boo Pamela Oliver (born on 10 April 2003), Petal Blossom Rainbow Oliver (born on 3 April 2009)[6] and Buddy Bear Maurice Oliver (born on 15 September 2010).[7] Oliver announced the births of the two youngest children on Twitter.[8][9] The family lives in Clavering, Essex.[10]

In 2009 Oliver claimed to be of partial Sudanese ancestry via his great-great grandfather John, whom he described as “a bit swarthy with curly hair”.[11] However, research for the Sunday Express established that John's father James was a hatter from Penzance, and that James' father Richard was also Cornish, leaving little or no possibility of a Sudanese connection. The family legend of Sudanese ancestry may have originated in the 19th century when John Oliver returned from sea, possibly with a tanned complexion after visiting Africa.[12]

In 2000, Oliver became the face of the UK supermarket chain Sainsbury's through an endorsement deal worth £2 million a year.[4] After 11 years the partnership between Oliver & Sainsbury's ended. The final television advert was for Christmas 2011.[13]

Putting up his house as collateral without telling his wife, Oliver created the Fifteen Foundation in 2002. Each year, fifteen young adults who have a disadvantaged background, criminal record or history of drug abuse, are trained in the restaurant business.[14]

In 2003, he was awarded an MBE.[15]

In 2005, he initiated a campaign called "Feed me Better" in order to move British schoolchildren towards eating healthy foods and cutting out junk food. As a result, the British government also pledged to address the issue. Delving into politics to push for changes in nutrition resulted in people voting him as the "Most Inspiring Political Figure of 2005," according to a Channel 4 News annual viewer poll.[4]

His emphasis on cooking healthily continued as he created Jamie's Ministry of Food, a television series where Oliver travelled to inspire everyday people in Rotherham, Yorkshire to cook healthy meals. Oliver conceived and established the Fifteen charity restaurant where he trained fifteen disadvantaged young people to work in the hospitality industry. Following the success of the original restaurant in London, more Fifteens have opened around the globe: Fifteen Amsterdam opened in December 2004, Fifteen Cornwall in Newquay opened in May 2006 and Fifteen Melbourne opened in September 2006 with Australian friend and fellow chef Tobie Puttock.[21]

Oliver then began a formal campaign to ban unhealthy food in British schools and to get children eating nutritious food instead. Oliver's efforts to bring radical change to the school meals system, chronicled in the series Jamie's School Dinners, challenged the junk-food culture by showing schools they could serve healthy, cost-efficient meals that kids enjoyed eating.[22] Jamie's efforts brought the subject of school dinners to the political forefront and changed the types of food served in schools.[23]

In June 2003, Oliver was awarded the MBE in the Queen's Birthday Honours. He has also written columns for The Times. A great proponent of fresh organic foods, Oliver was named the most influential person in the UK hospitality industry when he topped the inaugural Caterersearch.com 100 in May 2005.[24] The list placed Oliver higher than Sir Francis Mackay, the then-chairman of the contract catering giant Compass Group, which Oliver had soundly criticised in Jamie's School Dinners. In 2006, Oliver dropped to second on the list behind fellow celebrity chef Gordon Ramsay.[25] In July 2010, Jamie regained the top spot and has been named as the most powerful and influential person in the UK hospitality industry once again.[26]

From 1998, Oliver was the public face of the Sainsbury's supermarket chain in the UK, appearing on television and radio advertisements and in-store promotional material. The deal earned him an estimated £1.2 million every year.[29] By 2004, the company had made 65 advertisements with Oliver, but this arrangement has not been without controversy. Oliver was reported to have admitted that he does not use supermarkets, saying “For any chef, supermarkets are like a factory. I buy from specialist growers, organic suppliers and farmers".[30] He was also said to have been criticised by Sainsbury's CEO Justin King when he slammed the "junk" sold by supermarkets that ends up in the lunchboxes of millions of children. 1 molhinho de espigos ou grelos das couves

1 chávena de arroz carolino

1/2 chávena de feijão vermelho cozido

3 chávenas de água quente

sal a gosto

2 rodelas de chouriço vermelho

1 folha de louro

1 cebola picada

2 dentes de alho picados

3 colheres de sopa de vinho branco

Leva-se ao lume brando um tacho que se cobriu o fundo com azeite e onde se juntou a cebola picada, a folha de louro, o chouriço cortado, um pouco de sal e o alho picado.

Deixa-se cozinhar tapado, durante alguns minutos.

De seguida, junta-se a água quente, os espigos que foram bem lavados e permaneceram durante alguns minutos numa taça com água e um pouco de vinagre (para matar qualquer insecto).

Junta-se o feijão cozido depois de se ter acrescentado o arroz e este estar quase cozido.

Rectifica-se de sal e deixa-se apurar um pouco.

Servi com filetes de sardinha panados mas com pao ralado especial , feito em casa a base de sementes =D
